Canning Sweet Potatoes

Step #1 – Place sweet potatoes in a large pot with a couple inches of water in the bottom. Cover and steam for 15 to 20 minutes. 

Step #2 – Remove sweet potatoes from pot and allow to cool enough so you can handle them without burning your fingers. 

Step #3 – Peel sweet potatoes. I saved my sweet potato peels and gave them to my horses later.

 

Step #4 – Cut sweet potatoes into large cubes and place in sterilized mason jars. 
 
Step #5 – Cover with boiling water. Wipe rims off and place lids on jars. Process in a pressure canner according to USDA directions.

Note: Cooked sweet potatoes are okay to feed your horses, but white potatoes are not.
