
This has to be one of my all time favorite ways to use up summer squash. It is one of the easiest meal to make!
Vegetable Fajitas or Tacos
I don’t really use a recipe… more of just a method.
Here’s what you do:
Slice a mixture of yellow squash, zucchini, onions, and bell peppers and place into a pan with a little oil. In the photo above you can see I also added mushrooms because I had them on hand.

Sprinkle Taco Seasoning to taste over the vegetables and stir until combined. Saute until soft, but not mushy.

You can serve the veggies with either warmed flour tortillas or corn tortillas. I usually serve them with corn tortillas that have been warmed in a pan with about 1/2 teaspoon of oil.

You can serve the fajitas or tacos with a variety of toppings such as shredded lettuce, shredded cheese, salsa, sour cream, avocados, etc. These are even delicious for breakfast just add some scrambled eggs and/or hashbrowned potatoes.

What a great idea! I would have never thought to put taco seasoning on squash, but why not? Definitely trying this.
